Ingredients
12 oz penne pasta
1 lb chicken breast, cut into chunks
3 tbsp butter
4 garlic cloves, minced
1 cup heavy cream
1 cup chicken broth
1 cup sharp cheddar cheese, shredded
1 cup Parmesan cheese, grated
1 tsp Italian seasoning
Salt & pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions
1. Cook penne pasta according to package directions. Drain and set aside.
2. Season chicken with salt, pepper, and Italian seasoning. Cook in a skillet with butter until golden and cooked through. Remove and keep warm.
3. In the same skillet, sauté garlic in butter until fragrant. Add cream and broth, then stir in cheddar and Parmesan until creamy and smooth.
4. Toss in cooked pasta and chicken. Mix until well coated.
5. Garnish with parsley and extra cheese.
Notes
Tip: Save a bit of pasta water to thin out your sauce if it becomes too thick.
