Fresh red cabbage coleslaw with apple and Parmesan.
Ingredients
Scale
1 small red cabbage
1 apple
2 spring onions
2.1 oz Parmesan
3 tbsp olive oil
1.5 tbsp apple cider vinegar
1 tsp Dijon
1 tsp honey
Salt and pepper
Instructions
1. Shred cabbage
2. Add apple and onions
3. Whisk dressing
4. Toss together
5. Fold in Parmesan
6. Let rest before serving

Best served slightly chilled.
