Description

A fresh, tangy, and colorful red cabbage slaw with lime dressing, perfect as a side for any meal.


Ingredients

1 clove garlic, minced

1/4 cup olive oil

2 tablespoons rice vinegar

3 tablespoons lime juice

2 teaspoons honey

3/4 teaspoon kosher salt

1/4 teaspoon ground black pepper

8 cups thinly sliced red cabbage (about 1 medium, 2 pounds)

1 cup shredded carrots

4 scallions, sliced on a bias

1/2 cup chopped cilantro


Instructions

1. Whisk together garlic, olive oil, vinegar, lime juice, honey, salt, and pepper in a bowl.

2. Add cabbage, carrots, scallions, and cilantro.

3. Massage and toss until evenly coated.

4. Let sit 10 minutes before serving.

Notes

For a spicier kick, add sliced jalapeños. Store refrigerated for up to 2 days.
