Description

Ingredients

Sugar

Corn syrup

Peppermint oil

Gelatin or agar-agar (vegan substitute)

Butter (optional)

Cream of tartar

Red food coloring


Instructions

1. Heat sugar and corn syrup to 240°F.

2. Whip with gelatin or aquafaba until fluffy.

3. Add peppermint oil and red coloring.

4. Shape the mints into discs or piped mounds.

5. Air-dry for several hours until firm on the outside but soft inside.

Notes

Use natural peppermint oil for stronger flavor.

Store in an airtight container at room temperature.
